From a young age, Chef Evan Edge was inspired by the culinary arts. His passion stemmed from watching Emeril Lagasse and other Food Network greats, as well as from his Massachusetts-born mother who brought a very traditional New England cuisine to the table.
Growing up in South Florida, Edge had always been around a plethora of fresh seafood and Caribbean cooking that strongly influenced his cooking style. At age seventeen, he began his adventure into the culinary world, enrolling into Le Cordon Bleu College of the Culinary Arts, where he graduated with honors in 2008 from the Miami campus.
Chef Evan’s first position in the professional culinary world was as a Pastry Chef at the Westin Diplomat Resort and Spa in Hallandale Beach Florida. Over his six and a half years there, he was able to hone his pastry skills through his colleagues at that wonderful beachfront property. He also partook in multiple prestigious events; including Love and Hope Charity, NFL Super Bowl XLIV and even having the opportunity to cook for two former American presidents.
Finally, Edge’s career brought him to the Westin Charlotte, working Banquets, and eventually becoming the supervisor for the Banquet Kitchen and the highly-rated restaurant JP Charlotte. This was where he was introduced to the wonderful world of deep-rooted Southern cooking. Most recently, he had the opportunity to work with a completely new crowd of dinners at the Acts Plantation Estates Retirement community at The Chophouse, where they really promoted a culture of loving kindness for the residents with block party pig roasting festivals, wine pairing dinners and even cooking classes.
“The Passion for cooking is an ever burning flame for me that received new kindling as I moved from Banquets into restaurants, and Charlotte’s growing food scene is the perfect place to experiment with new ideas, flavors, and plating. It’s truly exciting for me to return to the JP Charlotte team as Chef de Cuisine and I look forward to making your culinary experience truly memorable!”
